The Inimitable G&H G&T sorbet: To coupe or scoop?

Any recipe that calls for copious amounts of G&H gin is a winner in our book. This fabulously light, bright Gin & Tonic Sorbet is absolutely delicious and a doddle to make. It’s the perfect way to end a meal, especially on sunny summer evenings, or as a simple treat to enjoy with your favourite gin pals. Serve in a coupe or a cornet scoop – either way, it’s wonderful!

Ingredients

  • 175g Caster sugar
  • Zest and juice of 2 lemons
  • ¾ pint of tonic water
  • 6 tablespoons of G&H LDN gin
  • 1 egg white
  • Lime and mint to decorate

Method

  1. Put the sugar in a pan with 175ml of cold water and heat, stirring occasionally.
  2. Add zest and juice of the lemons and boil for 5 minutes.
  3. Cool and strain.
  4. Stir in the gin and the tonic.
  5. Freeze until slushy.
  6. Chill an empty food processor bowl in the fridge.
  7. Froth the egg white with a fork until doubled in size, then pour both the slushy mix and the egg white into the chilled bowl and pulse to blitz together.
  8. Do this quickly so it doesn’t start to melt.
  9. Pour the mix into a suitable container and place in the freezer until solid.
