The G&H Spirits Rhubarb Leaf Cocktail

We do love a cocktail here at G&H Spirits HQ. Flavour of the month this month is Rhubarb. We get it, you’re super busy, but going to the effort of making the rhubarb syrup that’s in this G&H Spirits cocktail is worth it. Trust us. We’ve chosen the LDN Initial Gin for this Rhubarb Leaf cocktail as the lemon zest, clementine and macadamia botanicals pair really well with the rhubarb.

INGREDIENTS

  • 2 sticks Rhubarb
  • 500g Sugar
  • 300ml Water
  • 50ml LDN Initial Gin
  • 25ml Lemon Juice
  • 2 Raspberries
  • 1 Egg White
  • Chilled coupe glass, ice, sliver of rhubarb and sugar to garnish

METHOD

  1. First, make a rhubarb syrup. Slice one of the sticks of rhubarb and add to a pan with the sugar and water. Bring to a fierce boil, then remove from the heat, let is cool and strain.
  2. Add 20ml of the rhubarb syrup you’ve just made to a cocktail shaker along with the Georgie and Henners Initial Gin, lemon, raspberries and egg white. Shake it up firstly without ice, then add the ice and shake again. Double strain (out of the shaker, and also through a sieve) into your chilled coupe glass. Cut a strip of rhubarb, dip it into the sugar and lay across the surface of the glass. Et voila! A delicious rhubarb leaf cocktail ready to be enjoyed.
  3. Take a moment.

You can blitz the rhubarb syrup before straining it to give a more concentrated syrup - it turns it puree like and the drink has a thicker texture and even more of the tartness that rhubarb is so well known for.
